FERMENTATION

Cold maceration at 10ºC for 8 days. The spontaneous alcoholic fermentation is held in inox containers at a controlled temperature of 27ºC followed by Post fermentation infusion. Spontaneous malolactic fermentation.

AGING

The wine is aged and stored for 8 months in new French oak barrels
